These pancakes are light and fluffy
and sooo moreish!...
Absolutely one of my new favorite thing right now!
1 cup quick oats
1 egg
about 1/2 cup milk
1 grated apple (or any fruit, nuts or berries)
1 Tbsp sugar (or honey)
pinch salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2-3 Tbsp melted butter
Combine the ingredients in a bowl.
Heat a nonstick pan over medium heat. Coat pan with cooking spray or add a tsp of oil. Spoon about 1 1/2 tablespoons batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles and cook until bottoms are lightly browned.
