The biggest problem during school holidays for me would be the lunchtime))
One has to invent and provide quick and easy to prepare lunch!
I am always on a look out for some clever ideas.

Today i cooked a very nice and yummy cheesy melts using pitta bread as a base.

Stuffed peppers
Stuffed peppers
5-6 peppers, halved, seeds revoved
400g mince pork ( any mince meat)
100g mushrooms, sliced
3 cloves garlic, minced
1 onion, finely chopped (divided)
1 carrot, grated
3 tomatoes, chopped
salt, pepper
Mix mince pork, 1/2 chopped onion, mushrooms, garlic, salt and pepper really well.
Spoon the mince mixture into each pepper until full. Arrange in a roasting dish.
I a pan in a little olive oil fry 1/2 of the onion, grated carrot for about 3-5 minutes. Add chopped tomatoes. Pour 1/2 cup of boiling water and cook for 2-3 minutes.
Pour the sauce over the peppers and roast for 45-60 minutes.

Courgette gratin
Courgette gratin for dinner today.
3 courgettes, sliced 1/2 inch slices
3 spring onions, chopped
3 cloves garlic, minced
pinch of chili flakes
1 Tbsp flour
1 cup milk
salt, pepper, nutmeg
50g cheese, grated
2-3 Tbsp breadcrumbs
Melt the butter in a pan and cook the onions over low heat for 2-3 minutes. Add the courgettes and cook for 10 minutes, or until tender. Add the salt, pepper, and nutmeg. Stir in the flour. Add the hot milk and cook over low heat for a few minutes, until it makes a sauce. Pour the mixture into a baking dish.
Combine the bread crumbs and cheese and sprinkle on top of the courgette mixture and bake for 20 minutes, or until bubbly and browned.
