Bean patties with yogurt sauce
2 tins mixed beans, well drained
1/2 cup pumpkin puree
1 apple
1 clove garlic, minced
2 Tbsp Panko breadcrumbs
1/2 tsp ground coriander
1/2 tsp paprika
salt, pepper
For the sauce:
1 cup yogurt
1/2 cucumber, coarsely grated
1 small clove garlic, minced
lemon juice to taste
parsley, mint, salt, pepper to taste
Bake the apple and pumpkin until soft (about 30-45 min.) Remove skin. Alternatively, you can cook them in a microwave. Puree the pumpkin and apple.
Combine all ingredients in a bowl and mash them together.
Once mashed/mixed to desired consistency, form into four patties. Place in a fridge for one hour to firm up a little.
Cook in a pan in olive oil on medium heat for a couple minutes on each side.
For the sauce, grate the cucumber and squeeze excess water.
Combine the yogurt, cucumber, garlic, parsley, mint, lemon juice, salt, and pepper in a bowl.
