Stilton and broccoli soup


Broccoli & Stilton soup

1 broccoli head
1 onion, chopped
2 cloves garlic, minced
1/2 apple chopped
1 potato, chopped
500ml chicken stock
100ml cream
100g Stilton, crumbled
salt, pepper

Heat the olive oil in a saucepan and then add the onions, garlic and apples. Cook on a medium heat until soft. 
Add the potato and a chicken stock.
Cook for 5-10 minutes until all the vegetables are soft.
Add the broccoli and cook for a further 10 minutes. Carefully transfer to a blender and blitz until smooth. Return to the pot and stir in the Stilton and the cream.
