Chicken and rosemary lentil traybake


Lovely and easy to make recipe from Morrisons.
Just how i like it!

6 chicken thighs
1 onion, sliced into wedges
1 red pepper, sliced into rings
3 garlic cloves, sliced
2 sprigs rosemary
250g green lentils
600 ml chicken or vegetable stock (or water)

Make slashes in the skin of each chicken thigh, season and arrange in a large roasting dish.
Roast for 10 minutes.
Scatter the onion, peppers, rosemary and garlic
around the chicken and toss well.
Add the lentils and pour the stock over.
Cover with foil and bake for 30-40 minutes
