Menemen /Turkish scrambled eggs and tomatoes



Menemen /Turkish scrambled eggs and tomatoes

1/2 onion, chopped
pinch of chili flakes (or to taste)
1 garlic clove, minced
1 cup chopped tomatoes (tinned or fresh)
pinch sugar
salt
2 eggs

In a pan fry the onions until transparent and fragrant.
Add tomatoes, dried chili flakes, salt and pepper, and turn the heat down to low. Simmer for 10-15 minutes.
Crack the eggs on top of the tomato sauce.
Mix the egg with the tomato sauce a little, then cover the pan for 2-3 minutes.
When the eggs are cooked, serve and enjoy!
