Sunshine day
Today was just one of those days
when everything goes wrong.
Computer trouble, broken straighteners, failed visit to the cinema,
upset teenager, drizzle rain and chilly wind...
But everything turns out OK in the end)
We fixed the computer and bought new straighteners.
And happy S. went to the cinema.
I just hope that you are not struggling through the weekend as we are:)))

Salmon Pasta Bake
Salmon Pasta Bake
serves 3-4
250g any pasta shapes
1 tin salmon, drain
1 small tin sweetcorn, drain
2 Tbsp butter
1.5 Tbsp flour
300-400ml milk
100g grated cheese (divided)
salt, pepper
To make the sauce, melt the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually stir in the milk to make a thick white sauce. Remove from the heat and stir in most of cheese.
Cook the pasta according to a packet instructions, mix with the white sauce, fish and sweetcorn. Transfer to a baking dish and top with the rest of the grated cheese. Bake for 15-20 mins until the cheese on top is golden and starting to brown.

Chicken with cream, tarragon and courgette spaghetti
Chicken in cream with tarragon and courgette spaghetti
For two:
3 courgettes, cut into strips/spaghetti using spiralizer
2 chicken breasts, cut into bite-size pieces
3 cloves garlic, minced (divided)
150ml double cream
pinch of chili flakes
salt, pepper
tarragon (fresh or dried)
Using your spiralizer make your courgetti by cutting your courgettes into spaghetti-like strips.
Now you can either boil them in salted water for two minutes or put them in a colander and sprinkle with some salt. Leave to stand for 20 minutes then squeeze the water out with your hands and fry them in olive oil, chili flakes and garlic for 2-3 minutes.
Heat the oil in a pan and fry the chicken pieces until golden brown.
Add half of garlic, salt, pepper, cream. Bring to the boil and cook for 10 minutes or until chicken is done and the sauce is thick and creamy.

Belgian waffles
2 cups self-raising flour
2 eggs
pinch salt
3/4 cup sugar
100g melted butter, cooled
about 1 cup milk (possibly more)
In a bowl, combine flour, sugar and salt. Add milk, eggs and butter. Mix well.
Bake in a preheated waffle iron according to manufacturer's directions until golden brown.
We have an electric waffle maker
which is absolutely brilliant!
