.

Finally evening sun is
shining through the window in our living room!
We have no direct sunlight
as the room faces North.
In summer months we get a glimpse of the sun
in the evenings though.

Now i am going to curl up on the sofa
and watch movies))
Have a nice Saturday evening!

Chicken with cream, tarragon and courgette spaghetti

Chicken in cream with tarragon and courgette spaghetti

For two:
3 courgettes, cut into strips/spaghetti using spiralizer
2 chicken breasts, cut into bite-size pieces
3 cloves garlic, minced (divided)
150ml double cream
pinch of chili flakes
salt, pepper
tarragon (fresh or dried)

Using your spiralizer make your courgetti by cutting your courgettes into spaghetti-like strips.
Now you can either boil them in salted water for two minutes or put them in a colander and sprinkle with some salt. Leave to stand for 20 minutes then squeeze the water out with your hands and fry them in olive oil, chili flakes and garlic for 2-3 minutes.
Heat the oil in a pan and fry the chicken pieces until golden brown.
Add half of garlic, salt, pepper, cream. Bring to the boil and cook for 10 minutes or until chicken is done and the sauce is thick and creamy.
