Chunky Potato and Turkey Meatball Soup



For turkey meatballs:

250g turkey mince
1 onion minced
1/2 carrot, finely grated
1/2 apple, peeled, cored and finely grated
1 small egg
1/2 cup breadcrumbs
salt, pepper

For soup:

1 onion, finely chopped
1 carrot, coarsely grated
1 clove garlic, minced
3-4 medium potatoes, chopped into 1/2 in cubes

Mix all the ingredients for the meatballs. Make 8-10 meatballs and set aside.

Fry the onion and grated carrot for 5-10 minutes until softened. Add minced garlic, followed by potatoes. Pour enough water to cover the vegetables and bring to a simmer. Carefully dip the meatballs into the soup and cook for 10-12 minutes. Adjust salt and pepper to taste.
