Pasta with Salmon
For two:
200g salmon, cubed
150ml cream
200g pasta
2 cloves garlic
1/2 carrot, sliced
1/2 cup peas
olive oil
Cook the pasta according to packet instructions in a pan of salted boiling water. 3 minutes before end add peas, then drain.
Meanwhile, heat the oil in a frying pan, add the garlic and carrots and fry for 2-3 minutes.
Add the salmon cubes and double cream and continue to cook over a gentle heat for five minutes, or until the salmon has cooked through.
Stir in the drained pasta and season, to taste, with salt and freshly ground black pepper.
