Poached Chicken


I just love this recipe by Nigella Lawson!

Put your chicken in a pot (with a lid) in which the chicken can fit snugly.
Add leeks, carrots and celery, coarsely chopped, followed by 2-3 garlic cloves, 2 bay leaves, 1 tsp of peppercorns, fresh parsley, salt. 
Pour in enough cold water to cover the chicken.
You want it just about covered.
Bring to a bubble, put on the lid, turn the heat to very low and leave to cook for 1½–2 hours. 
Serve the chicken and accompanying vegetables with brown rice, adding a ladleful or two of liquid over each shallow bowl,

Green Smoothie from Louise Roe



Drink this juice  and you will have clear skin in just four days, says Louise Roe!
"If I drink this concoction four days in a row, on the fifth day I see a huge difference in my skin: my face is clear of blemishes and has a nice glow to it." - reveals Louise to Daily Mail.
So simple?!
 I'm in! 

Green Smoothie from Louise Roe:

1/2 avocado
1/2 pear
1 lime
handful of spinach
handful of watercress
handful of parsley 

Blend all ingredients together. Add some filtered water (or coconut water) to loosen it up.

Bean Stew


1 leek
1 carrot
2 peppers
1 courgette
2 garlic cloves
pinch of chili flakes
1 tin tomatoes
1 tin red kidney beans
1 tin chickpeas
1 Tbsp tomato paste
pinch of thyme
fresh parsley
about 150 g mixed  watercress, spinach and rocket

First fry your vegetables in olive oil.
Add the rest of the ingredients except salad leaves.
Cook for 10-15 minutes,
then add your watercress and spinach.
Mix and take off the heat. 


Fresh spinach and watercress need 
only the very briefest cooking
and will wilt very quickly . 



Did you know that frying vegetables in olive oil
is better than boiling them.
According to Daily Mail it increases antioxidants in them!

RIP


Raspberry jam stuffed French toast


I love French toasts!
Do you?
To make it even more indulgent
try adding a spoonful of raspberry jam or peanut butter.



Spread a slice of wholemeal bread with jam of your choice.
 Press slices together, forming sandwiches.
In a bowl, beat together the eggs and milk.
Melt butter in a pan over medium high heat.
Dip sandwiches in the egg mixture to coat.
 Place in the skillet, and cook on both sides until golden brown.
Serve drizzled with maple syrup and nuts/berries/fruits.
