I just love this recipe by Nigella Lawson!
Put your chicken in a pot (with a lid) in which the chicken can fit snugly.
Add leeks, carrots and celery, coarsely chopped, followed by 2-3 garlic cloves, 2 bay leaves, 1 tsp of peppercorns, fresh parsley, salt.
Pour in enough cold water to cover the chicken.
You want it just about covered.
Bring to a bubble, put on the lid, turn the heat to very low and leave to cook for 1½–2 hours.
Serve the chicken and accompanying vegetables with brown rice, adding a ladleful or two of liquid over each shallow bowl,
