1 leek
1 carrot
2 peppers
1 courgette
2 garlic cloves
pinch of chili flakes
1 tin tomatoes
1 tin red kidney beans
1 tin chickpeas
1 Tbsp tomato paste
pinch of thyme
fresh parsley
about 150 g mixed watercress, spinach and rocket
First fry your vegetables in olive oil.
Add the rest of the ingredients except salad leaves.
Cook for 10-15 minutes,
then add your watercress and spinach.
Mix and take off the heat.
Fresh spinach and watercress need
only the very briefest cooking
and will wilt very quickly .
Did you know that frying vegetables in olive oil
is better than boiling them.
According to Daily Mail it increases antioxidants in them!
