from La Redoute.

And it's absolutely beautiful!

Went shopping with my precious one.

The Oaks Park

London 2 Brighton Challenge.

Over 2000 inspiring challengers set off on Saturday morning from capital to coast.

 Most will be walking and some will run.

Rest area in The Oaks Park, Banstead.

Beautiful park with fields and woods.

It has a fairly basic cafe that sells good coffee.

Where you can stop for a cooked breakfast or lunch.

After crazy and hectic week

I am just looking forward to this weekend!

I was in London yesterday.

Luckily Victoria station wasn't very crowded at all!

The advantages of off-peak time)

I have so much going on in my life right now!

But  hopefully

it may get better)

I am trying to find a part of me

that allows you to gain strength and  hope.

Sweet potato fritters

Sweet potato fritters

Makes 9 

2 sweet potatoes, grated

2 eggs

1/2 cup Parmesan, grated

salt, pepper

rosemary, thyme

Mix all the ingredients.

Add spoon full of mixture into frying pan and flatten. Cook for 2-3 minutes.

Carefully flip over and cook until golden on both sides.
