Flapjack
150g butter, melted with 3-4 Tbsp of golden syrup
150g sugar
300g porridge oats
pinch of salt
Pre heat oven to 180°C, 160°C fan, gas mark 4
Place all dry ingredients in a mixing bowl. Stir in the butter and syrup.
Mix well and spoon into a greased shallow 22cm (9 inch) square tin. Smooth the surface.
Bake in the oven for 20 minutes or until cooked. Mark into 12 slices whilst still warm.

Potato and Cheese Pancakes
Ingredients:
2 medium size potatoes, thinly grated;
1 egg;
1 tub of buttermilk (250g);
50g any cheese, grated;
1 small onion finely chopped;
3-4 tablespoons of self-rising flour;
Pinch of salt, pepper;
½ tsp. mixed dried herbs
Oil for frying
I a bowl mix all ingredients well. Heat a tablespoon of oil in a pan. Pour one ladle of batter into the pan. Fry each side until golden brown. Carefully flip the pancake over and fry on another side.
Serve with a dollop of Crème Fraiche.

Pork burgers
300-350 g of pork
1 onion, finely chopped
2 gloves of garlic
1 egg
1tbsp semolina
1tbsp corn flour
1tsp mustard
Salt
Pepper
Dry sage or any herbs you like
Breadcrumbs
Mix all the ingredients except breadcrumbs really
well. With wet hands make 5 burgers,
coat in breadcrumbs and arrange on a plate in a single layer. Leave in a fridge
for 30 min.
Pour 1-2 tbsp. of oil in a pan and fry burgers 3-4 min
each side. Transfer to a baking dish, cover with foil and roast in an oven 180*
for 20-30 min.
Delicious with mash potatoes or a nice salad
