Chicken cacciatore
This excellent sauce from Loyd Grossman i bought the other day. The sauce is absolutely delicious! Not too spicy and very aromatic. Love it!
So i cooked chicken cacciatore.
1 small chicken, cut into pieces
1 jar Loyd Grossman tomato sauce
In a large heavy saute pan, heat the oil over a medium-high flame. Add seasoned chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches.
Pour contents of the jar, 1/2 cup of water and cook for 30 minutes, covered with lid.

Spinach & Kale soup
400g frozen spinach
400g fresh Kale, chopped
1 onion chopped
1 potato cubed
2 cloves garlic
pinch of nutmeg
salt, pepper
1 hard boiled egg per person
Fry the onions in olive oil, then add garlic, potato and Kale. Pour enough water to cover the vegetables. Cook for 10 minutes, then add spinach, nutmeg, salt, pepper. Cook for another 10 minutes. Puree the soup.
Serve with hard boiled egg.

Peppers stuffed with quinoa
1 onion, chopped
1 carrot coarsely grated
2 cloves garlic
grated cheese
salt, pepper
1 cup cooked quinoa
4 peppers
Heat 1 tsp olive oil in a frying pan, add the onion and carrot and cook until soft. Remove from the heat, then stir through the quinoa. Season with pepper.
Divide the quinoa mixture between the peppers, then put into the oven for about 1 hour, covered with foil.
10 minutes before the cooking time sprinkle with cheese.
