Sausage casserol


8 sausages
1 onion, sliced
1 carrot, chopped
2 peppers, chopped
2 cloves garlic, minced
100g mushrooms
1 tin tomatoes
salt, pepper

In a hob-proof, ovenproof dish, fry the onions in the oil. Add the sausages and brown them gently to avoid bursting them.
Add other vegetables and garlic, followed by tin of tomatoes, salt and pepper.
Transfer to a preheated oven for about 30 minutes.
