Prawn and aubergine rice pilaf

Today's dinner is
a super quick and tasty pilaf.


1 onion, finely chopped
2 cloves garlic, minced
2 cups of cooked rice
200g cooked prawns
1 aubergine, sliced in half-round slices
1 tsp Garam Masala
1/2 tsp turmeric 

First, fry the aubergines in some oil on both sides until golden. Transfer to a plate and set aside.
Fry the onions until translucent for about 5 minutes, then add garlic, Garam Masala, tumeric. Keep frying for a minute or two.
Add rice, prawns and aubergine. Mix well and heat trough.
