Curry and Cauliflower "Rice"



We loved our dinner yesterday)
Vegetable curry was good
but the real star of the show was cauliflower "rice"!
Have you tried cauliflower rice yet? 
Incredibly fantastic!

In a food processor pulse the cauliflower florets to approximately the size of rice grains .
Heat the coconut oil in a pan over medium heat. Sauté minced garlic for 1 minute, then 
add in the cauliflower rice and continue to sauté for 4–5 minutes.
Season with salt and pepper, and serve.

Some of my favorites include fresh pasta with garlic, tomatoes and good olive oil, and
sourdough crostini with Ricotta, radishes and olive oil.

Lavender












Had a lovely day at Mayfield lavender farm!
Purple carpet of flowering lavenders
is simply breathtaking! 
What a beautiful place
for a walk or picnic! 
Definitely recharged me 
and got me ready for the busy week ahead)



Blueberry&Melon Smoothie Bowl


Have you heard the new thing about smoothies?
 You can put them in bowls!
You can make them into even more of a complete meal 
with the simple addition of a few toppings.
To eat them with a spoon use slightly less liquid than usual. 
Use your imagination and favorite ingredients!

My smoothie bowl has:
100g blueberries
2 wedges of melon
3 Tbsp yogurt
2 Tbsp oats
pinch of cinnamon
soy milk

For the topping:
Chia seeds, sunflower, pumpkin, linseed, sesame seeds
coconut flakes
Goji berries

Bean Salad with Apricots and Yorkshire Rainbow Trout


For the salad:

1 tin kidney beans, drained and rinsed
1 tin chickpeas, drained, rinsed
1 red pepper, chopped
100g french beans, cooked and cooled in cold water
1/2 red onion, chopped
3-4 apricots, stone removed, sliced
50 g feta cheese, crumbled
Olive oil, lemon juice, salt, pepper to taste.



Pan fried Yorkshire Rainbow Trout

Fry in hot oil about 4 to 6 minutes on each side,
or until meat flakes with a fork.

Cheese Stuffed Chicken Thighs




Cheese Stuffed Chicken Thighs

7 boneless chicken thighs
1/2 cup breadcrumbs
2/3 cup grated cheese
1 large egg
1/2 tsp dried tarragon
1/2 tsp dried rosemary
salt, pepper

Sprinkle both sides of thighs with salt and pepper.
Combine cheese, herbs, breadcrumbs and egg. Place a small mound (1 tablespoon) of breadcrumb mixture on each thigh. Roll up tightly to cover filling. Place in a baking dish, seam side down Roast for 40 minutes 
or until the chicken is ready.

my daughter loves them.
I rarely make biscuits,
because they never come out very good.
But these guys have mastered  the recipe to perfection!

Colorful Sri Lankan Party


Such an honour to be invited to
a colorful party like that!
Puberty parties are very common in Sri Lanka.
When a young girl turning into a woman is a gift of God 
and needs to be celebrated.  
It is also a way of letting the villagers know 
that the young girl is now fertile and ready for marriage.   




I was delighted when a colleague of mine, beautiful Shayamala, invited me to her daughter's big and colorful party!  
A puberty ceremony is usually celebrated by inviting friends and family. 
They often come bearing wonderful gifts and are then rewarded with a grand meal.
