Beetroot soup with spinach
1 onion, chopped
2 carrots, chopped
1 potato
2 cloves garlic
4-5 small beetroots, cooked
handful of spinach
chicken or vegetable stock (or water)
Fry the chopped vegetables with the potatoes, peeled and cubed, in a little oil for a few mins until beginning to soften.
Cover with the stock and simmer for 10-15 mins until the veg is tender. Add spinach and cooked beetroot and bring to the boil.
Blend until smooth, then season.

Thai Curry Coconut Meatballs
12 meatballs
1 cup coconut milk
1 tsp ground ginger
1 Tbsp curry paste
1 Tbsp fish sauce
1 tsp sugar
cayenne pepper to taste
Fry the meatballs until golden. Set aside.
Heat the coconut milk in a wok over medium heat. Let it cook for a few minutes until it thickens and bubbles. Add in the curry paste and work it into the coconut milk using the back of a wooden spoon.
Once combined, add in the rest of the ingredients along with meatballs. Spoon the curry sauce over the top of the meatballs and cook, stirring now and then, 3-5 minutes.

Minced pork noodles
200g minced pork
2 portions of noodles
1 green pepper, chopped
1 handful of spinach
chili flakes to taste
2 Tbsp soy sauce
1 Tbsp fish sauce
1 tsp sugar
Cook the noodles.
Heat a wok over medium heat. Add 2 teaspoons oil and swirl to coat. Add garlic and chili flakes. Cook for a minute.
Add mince. Cook, breaking up mince with a wooden spoon, for 4 to 5 minutes or until browned. Add soy sauce, fish sause, sugar and peppers. Stir-fry for 1 minute.
Add spinach. Stir-fry for 1 minute. Add noodles and stir to combine. Sprinkle with sesame seeds.
